What to Expect from Sister Vegetarian Recipes...

Sister Vegetarian knows the importance of nutrition without breaking the bank. In lieu of this, I keep the meals to a cost that anyone can create and still stick to a budget. I also include raw vegan meals. Sister has acquired a Raw Vegan Chef Certfication through The Raw Food Network-Ekaya Institute of Living Food Education. I love to cook meals from Africa, India, the Middle East, Greece, Italy, and the list goes on. When I cook, I call it traveling the world without leaving my home. I see cooking as a way to experiment and learn about other cultures, as I also learn more about my roots.

Cabbage...The UnSung Hero and A Traditional Indian Recipe Using Cabbage




Cabbage is one of those unsung heroes of Saint Patrick's Day where we only hear about it and see it abundantly in various meals in celebration of Saint Patrick's Day. Even the grocery stores get their part in to honor this unsung hero by reducing the price of cabbage to usually 29 cents per lb around this day. This is more than half it's usual price! You thought that I would do a vegan cabbage recipe for saint Patrick's Day weekend; but, on the contrary, these traditional Irish cabbage recipes are so common around this time, even from a vegetarian and vegan perspective, that I decided to do a different spin on this beautiful, antioxidant vegetable that seems to have it's own celebration and honorary position at the table on Saint Patrick's Day and that weekend! However, please keep in mind that cabbage has long been a staple of the Irish diet; hence, the reason it is associated with Saint Patrick's Day meals. So, cabbage does get its daily due on the dinner table and not just in the spotlight until March 17th. Let's make cabbage a daily hero...a star...an honorary daily...weekly... table guest!

I think of cabbage as my hero..my unsung hero that does not get enough credit! Think of cabbage as my favorite Marvel comics action figures and posters adorning my home, or my favorite marvels comic t-shirt (yes...I am a kid at heart at 45...eat healthy vegan meals...act young...think young...you are endlessly young at heart...smile) that I love to wear on some weekends!

Let's take a look at why cabbage is an unsung hero that seems to get its crowning glory of honor at the dinner table only on Saint Patrick's Day, but should be honored at weekly meals all the time.




Benefits of Cabbage (reference and additional information found at WH Foods.com) Cabbage is loaded in a cancer preventive property called sinigrin. Sinigrin has received worldly attention in cancer prevention research as possessing bladder, colon, and prostrate cancer preventive properties. Besides cancer preventing properties, cabbage is great in waste elimination with its high fiber content; as well as, heart disease prevention with its cholesterol-lowering benefits .

So, which cabbage provides the higher cancer fighting and lowering cholesterol properties? Red Cabbage...or as it goes in produce...the darker the produce the more nutrients (i.e. collard greens, kale, mustard greens, beet greens, Swiss Chards, and kale as dark leaf greens provide more nutrients that common lettuce varieties). But, please, purchase the green cabbage too as it does provide just as much prevention properties as red cabbage.

You can see why cabbage is my unsung hero! In celebration of this produce that receives an honor at the dinner table in fancy style on Saint Patrick's Day, I decided to do a quick, light but filling, and all around nutrient-packed meal from green cabbage. It's a traditional Indian recipe called Cabbage Chana Dal Salad where chick peas (aka garbanza beans), cabbage, and mint leaves are the main ingredients and from there you can add as you like. In this recipe, you can also use red cabbage, or a combination of both red and green cabbage. Since I believe that we should eat at least 25% to 50% of our meals raw a week for added nutrition, I did a raw cabbage salad to pack in the vitamins, nutrients, antioxidants, and cancer fighting properties. This salad is loaded with protein from the chick peas; and, fiber, antioxidants, heart health, and cancer fighting properties from the cabbage and tomatoes.

So, Da-Da...introducing the crowning glory of the weekend but also a crowning glory daily: CABBAGE as Cabbage Chana Dal Salad.

Cabbage Chana Dal Salad (traditional vegetarian Indian dish)



Ingredients:

4 cups of shredded raw cabbage
3 cups of diced tomatoes or 1 28-oz can of organic diced tomatoes
2 cans of chick peas, drained and rinsed
1 medium onion, chopped
4 medium cloves of garlic, diced
3 TBSP fresh mint leaves, chopped
3 TBSP fresh oregano leaves, chopped
3 TBSP lemon juice
ground black pepper to taste
sea salt to taste

Directions: Mix everything in a large mixing bowl with clean hands. Place in the refrigerator for 20 minutes to chill before serving.

Serving suggestions: when served as a meal,..I served chapatti bread (reference Day 28 of Sister Vegetarian's 31 Days of Drama-Free Living Book for the vegan recipe) with vegan sour cream on the side for a traditional Indian Meal
